Recipe Friday... Vietnamese Prawn Omelet.. mmm!!!

Ingredients - Vietnamese Prawn Omelet

Ingredients
Serves 1 – very generous portion!

Sesame oil
1 small handful mung bean sprouts
1 Tbsp hoi sin sauce
1 Tsp fish sauce
1 Tbsp toasted and crushed peanuts
3 Tbsp chopped cooked chicken or cooked prawns
1 Tsp chopped fresh mint
1 Tsp fresh chopped coriander
3 fresh eggs
Salt and pepper
1 sheet rice paper
Wedge of lime

Directions
In a small omelet pan add a little sesame oil and gently cook the sprouts until soft but still crunchy (1 minute).
Allow to cool in a bowl with the next six ingredients.
In a clean omelet pan add a little sesame oil and heat gently. In a bowl beat the eggs with seasoning. Pour into hot pan stir with fork till just set. Place cooled sprout mix in the middle of the omelet. Fold over in half and slide onto a plate and garnish with piece of grilled rice paper and wedge of lime.
* Serve with a dollop of hoi sin sauce.

What would this world be without us dames?.. (this according to Moi, a dame)

Shirts wouldnt get ironed at home, they'd be done down the road at the dry cleaners/laundry
Dishes would pile up in the kitchen zinc, and never be put back in the kitchen cupboards
Bed would just be 'pulled' straight, and sheets never would be ironed !
Bathroom towels would be hung up crumbled onto their rail..
Socks would never be folded together when they come from the washing
Underpants would not be folded
One would always expect food in the fridge, how it got there would remain a mystery
My man would not need a house, just a study with a TV and a remote for rugby watching

What me being a woman means to me...

I love the fact that I can dress up on occasions, pamper and preen and spray and titivate
I adore doing shopping, even for mundane things like food!
To me having a fresh clean smelling home is worth the effort it takes to get it that way
Nothing nicer than slipping between clean freshly ironed crisp sheets
I love the buzz I get from having friends over and seeing them enjoy my meal I specially cooked for them..
I love the fact that I have the option to change my mind! After all this is woman!
Seeing my garden blossom and thrive gives me great joy
I'm unique.. no carbon copy.. this is me.. Moi.. what you see is what you get and I hope I give joy and love and I hope all who are in contact with me, find me genuine .. ?

Why do I enjoy Saturdays so much?... well.. start off with my cuppa Chai tea and the Weekend papers.. this takes me at least two hours.. then a nice leisurely breakfast.. either yogurt and fruit, or french toast with bacon, or croissants and cheese/jam. I enjoy tomato chili jam the best with a strong cheddar! mmm! Then do a few chores.. washing, sorting out the home chores.. like refreshing the flower water. Nothing too hectic.. after all, .. its Saturday.

Then.. I so enjoy taking off to the shops.. have a longgggg browse .. a longgggg lazy lunch at a great spot.. and then no need to cook dinner! We can either catch up with the TV (Rugby season has started).. yay says my man.. oh dear says Jeanie!

I enjoy Saturdays, because I get to spend special time with my man too! Yes.. I love Saturdays!

So.. this is my 'normal' Saturday.. what's yours?.. do you have any form of routine?..

Recipe Friday..
Goi Buoi Tom Hum (Pomelo, avocado and lobster tail salad)
4 small raw lobster tails, shells intact (about 250geach)
1 tab vegetable oil
1 pomelo
1 avocado
1/2 bunch watercress, picked
10 perilla leaves sliced
10 Vietnamese mint leaves, sliced
10 mint leaves sliced
3 tab dipping fish sauce,
1 tab fried garlic
Preheat oven to 220C. Split the lobster tails in half lengthways, with a cleaver and remove the digestive tract. Season the lobster with salt and pepper.
Heat the oil in an ovenproof frying pan over high heat. Place lobster tails in pan, cut side down, and sear to 2 minutes. or till colored. Turn lobster over, then transfer pan to oven, and roast for 5-10 minutes or until just cooked through.
Meanwhile, peel pomelo, roughly segment it by simply tearing off the small pieces with hands, doing best to remover the tough outer pith. Peel avo, and cut into 2cm dices.
Mixing bowl - combine pomelo, avo, watercress, sliced herbs. Dress with dipping fish sauce and toss lightly. Transfer salad to serving bowl, and garnish with fried garlic. Serve the lobster tails on the side. Serves 4-6 as part of a shared meal.

The lilies have opened up nicely, they perfume the air with their soft delicate perfume..

I'll show you my amazing Ginger flowers.. I've had four flowers this year.. even their leaves are amazing! So lush, and tropical, makes me think I'm in the Bahamas.. not Queensland Australia..

Changi Singapore airport..

The orchid display here is world renowned.. and a must see and enjoy! So take time out and smell the orchids!

They are breathtaking!

Not a leaf out of place..Just amazing for such a very big public space to be so peaceful and restful!

Of course, there's the shops here as well, much temptation!

But these beauties even had my attention! I must admit I did pop into the 'Cosmetics' shop.. for some of my favorite perfume.. Channel and lipsticks, and nail polish, while I was there.. its much cheaper than anywhere I can get it!

Thankfully this yolk is light to bear too.. this is a great way to start the day.. nice soft sand.. good breeze, not too wet..

I know this beach says Buffalo to Mr. Buffalo.. you don't need to even lead me anymore.. done this a few times in my life already!....

Sun just peeping through.. sea blissfully calm.. I noticed a fisherman in his bamboo boat coming closer to my husband and I ..

I got out of the water as quick as I could to get my camera.. the water was like a mirror so calm it was!

Rowing these bamboo boats sure takes energy and much skill!

Cut palm leaves for my blue white vases.. I love this look

Remove our current 'spa jacuzzi bath' and replace it with a stone tub like this one!

Add some feature wall color to our dining room.. I'm thinking this lime?

Hang a beautiful chandelier outside like this idea.. make our outside deck a room to be enjoyed in, not just a 'deck'!

Paint our bedroom this color.. our bed is the same as this, but dark mahogany wood

After we've replaced our stand alone bath.. paint and hang pictures and mirror frames and statue heads, and stack of white towels..

Stunning old mirror as headboard great idea for guest room..

Reorganize our study to streamline it, like this idea..

Find/source/make/buy shocking pink scatters like these..

Sometimes, you just have to be in the right place at the right time.. David Hagerman, a photographer based in Saigon certainly was.. he walked past and through the open door, spotted this very typical lunch time scene. A simple meal was being shared and the doggie was sitting hoping for some scraps.

I've often wondered every time I've been to Vietnam I see soooo many stunning brides with their grooms.. even during the week.. odd times of the day.. every day.. WHY?...I guess it big business in Vietnam.. now I'm beginning to think its a 'pre-wedding' arrangement.. a sort of 'before the event' then the event can be done without the interferences of the photos etc?
I'd appreciate anybody giving me insight to how the traditional Vietnamese weddings happen..

But in the meanwhile.. I hope you enjoyed my brides/grooms as much as I did.. simply stunning!

What do you need to succeed?

And ultra thin Crepe Suzette, served with delicate vanilla bean ice cream!
These luscious French-style crepes are dressed to impress.

100g plain flour
Pinch of salt
1 egg
1 egg yolk
300ml milk
1 tbs unsalted butter, melted plus extra to fry
Ice-cream, to serve
Sauce
100g caster sugar
35g unsalted butter
150ml orange juice
1 orange, zested
3 tbs Grand Marnier or Cointreau
2 tbs brandy

Method

Place first six ingredients in a food processor and whiz until combined and mixture forms a smooth batter. Pour into a jug, and let sit for 30 minutes. Heat a small frying pan over medium-high heat. Carefully brush the pan with a little melted butter. Tilting the pan slightly, pour in enough batter (about 2-3 tablespoons) to just cover the base. Cook for 1-2 minutes until base of the crepe is lightly browned.
Carefully flip the crepe to brown the other side. Transfer to a plate and repeat until batter is used.
To make the sauce, heat sugar and 1 tablespoon water in a frying pan over low heat, stirring to dissolve sugar. Add butter, increase heat to medium and cook for 4-5 minutes until golden brown. Add orange juice and zest, and simmer for a few minutes. Pour in liqueur and brandy and stir to combine. Dip a crepe into the sauce, then fold it into quarters and place on a serving plate.
Repeat with remaining crepes, serving 2-3 per person. Serve with ice-cream.

Lesson from this empty pottery vessel... Up early at the Nam Hai proves a treasure this morning.. a treasure unimaginable! Here like this great big empty pottery pot, my treasure waits for me.. but I had to make an effort to get up early, arise from my very comfy bed.. before anybody else was up! Early bird?.. don't let me be an empty vessel just on show.. always make me useful please..

Lesson from the sun rays.. Dawn just breaking - sun rays make trying to do a dance through the palm trees..shine in spite of what you're given! Shine for all to appreciate your warmth and your light.. shine daily!

Lessons from deserted beach... Nobody on the beach this early, I'm alone with my thoughts, the wind blows any care I had away, and my mood lifts instantly with the peace of the ocean.. the ocean than can never be changed by man! Never be contained, never be tamed. Never moved. Always the same! Never be afraid of facing yourself, alone! This is where you find peace within.

Starting the Chinese Year of the Dragon in Ho Chi Minh City, Vietnam? Drop by the Park Hyatt Saigon they're kicking off their annual Tet celebrations with a dragon dance and a variety of food specials in their Vietnamese restaurant Square One.

Bun Bo Xao (Wok tossed beef and lemongrass)

LUKE NGUYEN: This is such a quick and simple dish to prepare and its a favorite of mine. At Red Lantern, we serve this as a light lunch. I love that I can taste the flavor of the wok flame on the beef. The heat of teh beef and the scent of lemongrass on cool vermicelli noodles and crunchy bean sprouts is a great example of balance of hot and cold.

Bun Bo Xao (wok-tossed Beef and lemon grass) - serves 4-6

1 pound beef sirloin or rump steak
3 lemongrass stems, white part only, finely chopped
2 Tab. Asian fish sauce
2 cloves garlic, crushed
2 Tab. oil
1 small onion, sliced
2 tea sugar
pinch salt
pinch fine white pepper
Vermicelli salad for serving (recipe follows)
1 tab fried shallots (how to follows)
1 tab. chopped roasted peanuts (how to follows)
2 tab. dipping fish sauce (how to follows)

Slice the beef into 1/16 inch strips and combine in a bowl with 2 tab lemon grass, all the fish sauce, and half the garlic. Allow meet to marinade 10 mins.
Pour half oil into wok, over medium heat and fry half onion, half remaining lemon grass, and half remaining garlic for 1 to 2 minutes until fragrant. Increase heat to very high and add half the beef and its marinade to the wok. Stir fry for 2 minutes, then remove the beef from the wok. Repeat with remaining beef, onions, lemongrass and garlic. Return first batch to the wok, season with salt, sugar, pepper, and continue to stir fry to heat through.
Serve on top of vermicelli salad. To finish, top with friend shallots, peanuts and dipping fish sauce.
Vermicelli Salad
rice vermicelli cooked in boiling water for five minutes, or according to instructions on packet.

Divide bean sprouts, 1 small cucumber, 1 handful perilla leaves (torn) 1 handful mint leaves (torn), 1 cup sliced iceberg lettuce, between 4 bowls.
Dress with 1/2 cup dipping fish sauce, 1/4 cup scallion oil, 1/4 cup fried shallots, 1/4 cup chopped roasted peanuts
Dipping fish Sauce (Nuoc Mam Cham) - makes 1 cup
3 tab Asian fish sauce,
3 tab rice vinegar
2 tab sugar
2 cloves garlic
1 birds-eye chilli
2 tab. freshly squeezed lime juice
Combine fish sauce, rice vinegar, sugar with 1/2 cup water, in saucepan, stir over low heat, till just before boiling point. Allow to cool.
To serve add garlic, chilli and lime juice.
Roasted Peanuts (Dau Phong Rang)
1 1/2 cups raw shelled peanuts
In a dry wok, stir fry the peanuts over a medium heat until the peanuts are cooked to a soft brown color. Crush the peanuts in a mortar until coarsely ground. The roasted nuts will keep in an airtight container for up to two weeks.

Give you some reason why I love traveling so much?

I get those spa treatments that I so love and never have time for at home! This spa on Ninh Van Bay island was just amazing.. I had 90mins of such an amazing Vietnamese Massage.. This alone will get me back there one day soon!

I get to rest my weary head/body at such exotic places.. this was at Ninh Van Bay Six Senses.. gosh! what more can I say?....

I get to meet/make new friends.. this man is a jeweler in Hoi An.. owns a stunning shop filled with marvelous jewellery. Every time I wear my two special bangles (Tiffany and Gorg Jensen) I'm right back there in Hoi An! Thank you Bac Viet. See you soon!

I get to taste and enjoy so many new delicacies. fruit.. cocktails.. cocktails.. fruits.. gosh I love to travel! Amazing chicken curry.. filled with the freshest of herbs.. then there's the coffee, and baguettes for breakfast, and the coffee du sud for when its sooooo hot!

I get inspiration to paint, photograph ... paint... my camera never stops when I'm away!

What an experience this afternoon was.. I met with a Nha Trang photographer.. he took me on the back of his 'om'.. moped 35km to this fishing village.. where the fishing boats had just arrived back.. oh my goodness me! Talk about taking a million shots! Just the best afternoon I spent in Vietnam!
Oh.. I do LOVE to travel.!!! Can't wait for 1st March, our trip to Vietnam leaves for 15 days of bliss and exhalation again! This time.. 'Reawaken Senses Tour'... I'm in the mood for some beach today.. imagining the cool breezes, the sounds of kids playing in the surf, and the feeling the warmth of the sun tingle on my toes.. oh smell the coconut smells of the suntan lotions.. yes.. oceans today please, its WEEKEND!

And I have every reason to be... our first very precious beautiful granddaughter arrived safely.. what a blessing. Born 11.08pm in Sydney, on 12.12.2011.. weighed in at 3.8kg.. mom and bub doing amazingly well.

Her name is Willow.. what a beautiful name as well. She is as cute as a button!

The joys of being a Grandmother?...

It's a nan's world

The difference between being a mother and a grandmother is like the difference between marriage and a love affair, says Eva Figes

Being a grandmother is an honour which, if you are fortunate, time bestows. Unlike almost every other reward in life, you do not have to work for it, or even deserve your luck. Having been a parent is no guarantee, and I feel sorry for my friends whose children show no sign of starting a family, because I know that the pleasure which I feel in having grandchildren seems to be universal among my friends. We may have disagreed over the years about many things - marriage, parenthood, work - but this new factor in our lives always produces the same response. A sort of rejuvenating glow. We sit at cafe tables showing off snapshots, exchanging anecdotes. That is, if we are not too busy baby-minding to meet at all. My oldest friend, who can boast seven granddaughters, almost never has time for lunch.

Old age commands no respect in our society. On the contrary, particularly for women, it is usually regarded as something shameful, to be lied about and disguised as long as possible. I have always been bluntly honest about my age and when my daughter, pregnant with her first child, asked what I would like to be called on its arrival, I had no hesitation in saying granny. No euphemisms, no inappropriate use of my first name. I was about to arrive at the top of the family tree and intended to make the most of my new status

A friend of mine recently became a grandmother for the first time after raising a family of six children. Since her youngest had not yet left home she was rather underwhelmed by the event. Slightly depressed, in fact. I was rather surprised by her first reaction, but I should have understood. By the time my first granddaughter came into the world I had had a decade of carefree childlessness, had grown used to the empty nest and was more than ready for a new, exciting factor in my life. I could pursue my own career, travel without worrying about teenagers trashing the flat in my absence, but I did miss the day-to-day warmth and involvement of family life. I had been a single mother, which is full of practical difficulties. Being an ex-single mother can be just plain lonely at times.

About 18 months after my friend with the large brood of children witnessed the birth of her first grandchild she was much more positive about her new role. "You don't have to do anything to be a grandmother," she said in some amazement. "You just have to be." I beamed with happy recognition. Grandmotherhood, unlike parenthood, is not a job description, but a state of being, immutable as the sun in the sky. The title "granny" confers a fixed status in the child's universe as the ancestral head of the family. Your age, usually such a handicap in the 21st century, is suddenly an asset. As far as the child is concerned, you are almost as old as time itself, and your age still brings with it the traditional attributes of respect and wisdom, reinforced by fairy-tales and storybooks.

Sometimes I do not conform to the stereotype. I do not have grey hair, for instance, and do not spend my time knitting them woolly garments. This is duly remarked upon, but I have other gifts. I am a dab hand at what is known in the family as "granny magic", a protracted ritual which makes incidental pains disappear within three minutes. Just what a witch-like granny is supposed to do. I also know things about the dim and distant past, like the dark days when nobody had a television. In a different, less orthodox mood, I have been dubbed a "groovy granny" which, as they get older, is more fun.

But the status of being a grandmother is not entirely based on fairy-tale stereotypes. It also has roots in everyday reality. Small children soon find out that their parents are fallible, that they tell fibs, lose their temper, quarrel from time to time and do not always have time to give the attention a child may need at a particular moment. A grandmother is usually different. She has time to give her undivided attention, is not in a hurry when the child comes round. On the contrary, she is likely to be totally at the child's disposal. She has time to play games, read stories and, most important of all, to listen. If something is troubling the child, particularly something in the parental home, granny is entrusted with the secret.

I still work and, since writing is a vocation rather than a job, hope to do so to the end. But the pressure is off. The future is no longer my concern, and I necessarily take one day at a time and enjoy what it has to offer. As far as I am concerned life has nothing nicer to offer than the care of a grandchild, and I am more than happy to abandon a day's work for the privilege.

As for a sleepover or a whole weekend, that is a real treat for all concerned. The children regard my flat as a home from home and know where everything is, but staying the night is an adventure. When my first granddaughter was small she would say, "I can't wait to go to bed", and insist on having a bath at five o'clock. Needless to say she would then spend several hours coming into the living room in her pyjamas, unable to sleep. My son's twin girls are awake and ready for action at the crack of dawn, only waiting to hear me stir before appearing, all smiles, in their nightwear. The fact that they actually wait for this signal - as instructed - is itself significant. Interrupted sleep is a pretty normal event for their parents.

Looking after children can of course be tiring, and there are occasions when one is glad to hand them back to their rightful owners at the end of a long day. But I have always found that every one of my granddaughters is incredibly good when in my care. No tears, no tantrums - if there are any, they always seem to start when mum arrives to collect them. Of course there is a certain amount of mischief - that is part of the fun - and I regard it as part of a grandmother's privilege to indulge them with special treats. But when I do lay down certain guidelines, about washing hands before lunch or whatever, they are always obeyed without question.

Which brings me to an important, qualitative difference between being a mother and being a grandmother. The latter relationship, at least in my experience, is wonderfully conflict-free. It might be a different story if I was minding a child full-time or, for that matter, if one of my children had produced a boy. But as far as I am concerned, one of the joys of being a grandmother, apart from the obvious fact that the role is part-time and often optional, is the lack of stress. It is rather like the difference between marriage and a love affair. Parenthood, like marriage, is hard work, a lifetime's commitment that brings pain as well as joy. Having a grandchild is like being in love. I know our time together is brief: the child will grow up, I will die. The very brevity of the relationship adds to its passion. I see the child's beauty, which hits me afresh each time, and have the privilege of sharing in its pristine innocence. Once my own children gave me that opportunity, but those days are long gone.

As an added bonus I feel closer to my own offspring since they became parents. It is nice to be needed now and then, and to be understood a bit better now they face the challenges I once had to cope with. Best of all, it is rewarding to be united by a common love, a shared concern.

Nobody looks forward to old age, but the gift of grandchildren brings an unexpected glow, like an Indian summer, to the winter season. For me, being a grandmother has a very particular poignancy. I came to England as a refugee from Nazi Germany at the age of six and never saw any of my grandparents again. This early loss and the awful way they died has been with me all my life, never more so than now when it is my turn to play the role of grandmother to a new generation.

I am constantly aware of echoes, repetitions. The old pain stirs, but now with an unexpected sense of healing. I sometimes feel as if my grandmother's spirit were sitting on my shoulder, watching me play her role with approval. Life goes on, I have grown old, my children's children are growing up in a country they can call their own. But because I lost my own grandparents so early in life, I am doubly aware of the preciousness of every moment I spend with the children, not just for me, but ultimately for them.

So I want them to have as many happy memories of their time with me as possible, because I have so few. For the time when they are adults, and I am no longer around. Some of them will come of their own accord, I know. My rooms, for instance, and the grand piano under which they like to play. But I also go out of my way to invent games and diversions particular to my presence in their lives. A certain game of "shop" is almost worn out with use and, if it has almost worn me out on occasion, never seems to lose its charm. There is a letter-writing game which costs a fortune in postage but is much more fun than using the telephone. The old and the very young have much in common, not least a joy in simple pleasures.

Ripeness is all, says the poet, and nothing has given me such a sense of ultimate fruition as the existence of my children's children. Certainly not the rows of books with my name on them, probably writ on water despite my best endeavours. If work and love are the ingredients for human happiness, the greatest is certainly love. But it cannot be worked for.

Like the children, it is a gift.
